Halloween is upon us and we love to get creative with coffee infused treats. Here's a Halloween-themed coffee infused cake recipe that incorporates our Karibu house speciality coffee.
This devilishly decadent dark chocolate coffee cake is perfect for Halloween, with our classic roast coffee adding a deep bold flavour that complements the rich chocolate. Topped with a “Midnight Mocha” glaze, it’s an irresistible dessert that’s as delicious as it is spooky!
Ingredients:
For the Cake:
- 1 cup Mara Karibu house coffee, brewed strong and cooled
- 1 ¾ cups all-purpose flour
- ¾ cup cocoa powder
- 2 cups sugar
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
For the Midnight Mocha Glaze:
- 1 cup powdered sugar
- 2 tbsp Mara Coffee (strong brew)
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Prepare the Cake:
- Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, milk, oil, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring until combined.
- Slowly add the cooled coffee, mixing until the batter is smooth.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before glazing.
- Make the Midnight Mocha Glaze:
- In a small bowl, whisk together the powdered sugar, Mara Coffee, cocoa powder, vanilla extract, and salt until smooth.
- Pour the glaze over the cooled cake, letting it drip down the sides for a spooky effect.
- Serve and Enjoy:
- Slice and serve your dark chocolate coffee cake accompanied with a hot cup of Mara Coffee for a sumptuously indulgent Halloween treat!
