Mara Dark Chocolate Coffee Cake with Midnight Mocha Glaze

Halloween is upon us and we love to get creative with coffee infused treats. Here's a Halloween-themed coffee infused cake recipe that incorporates our Karibu house speciality coffee.

This devilishly decadent dark chocolate coffee cake is perfect for Halloween, with our classic roast coffee adding a deep bold flavour that complements the rich chocolate. Topped with a “Midnight Mocha” glaze, it’s an irresistible dessert that’s as delicious as it is spooky!

Ingredients:

For the Cake:

  • 1 cup Mara Karibu house coffee, brewed strong and cooled
  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder
  • 2 cups sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract

For the Midnight Mocha Glaze:

  • 1 cup powdered sugar
  • 2 tbsp Mara Coffee (strong brew)
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Cake:
  •    Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
  •    In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  •    In another bowl, whisk the eggs, milk, oil, and vanilla extract until smooth.
  •    Gradually add the wet mixture to the dry ingredients, stirring until combined.
  •    Slowly add the cooled coffee, mixing until the batter is smooth.
  •    Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  •    Allow the cake to cool completely before glazing.

  1. Make the Midnight Mocha Glaze:
  •    In a small bowl, whisk together the powdered sugar, Mara Coffee, cocoa powder, vanilla extract, and salt until smooth.
  •    Pour the glaze over the cooled cake, letting it drip down the sides for a spooky effect.
  1. Serve and Enjoy:
  • Slice and serve your dark chocolate coffee cake accompanied with a hot cup of Mara Coffee for a sumptuously indulgent Halloween treat!
